This review has been published in Trends in Food Science & Technology. The paper outlines the current evidence on the health effects of dietary nitrate. A specific focus is on potential differences in these effects, dependent on whether the nitrate is consumed from vegetables or processed meat.
Oliver Neubauer currently leads the Austrian Science Fund (FWF)-funded clinical research project ‘Dietary Nitrate, Vascular Function, and Inflammation’. This project is also based on close collaborations with the group at Edith Cowan University. Rebeka Fejes, who conducts her doctoral studies as a part of this project, will visit the group of Dr. Bondonno later this year.
